Change the contents of the name node in widget.xml. Remember that grep is your friend ;)Also, shut down the console and clear your data directory (Simulator Reset) for the change to take.

Check out the "image" folder: Contents->image->960x540

The image you are referring to is the "application-logo.png". As Ben noted, after modifying you need to "Reset" and "Update" the simulator to see the changes.
